賀年食品 ~ 錦鯉椰汁年糕



新年快到了, 希望新一年一切會變成美好, 疫情盡早遠離

Koi coconut glutinous cake
錦鯉椰汁年糕

(6條小魚份量,for 6 small Koi )
糯米粉 100克
木薯粉10克 (如沒有,用澄麵粉代替)
澄麵粉 30克
冰糖60克
椰漿120克
水110克
南瓜粉/ 甘荀蓉/色素 適量
竹炭粉(做眼晴)
鹽少許

100g glutinous rice flour
10 grams of tapioca flour (if do not have, can use wheat starch instead)
30 grams of wheat starch
60 grams rock sugar
120g coconut milk
110 grams of water
Pumpkin powder/ carrots mashed / food coloring
Dark cocoa powder (for eyes)
A pinch of salt

1.mix glutinous rice flour, tapioca flour, wheat starch together and put aside
糯米粉、澄麵粉及木薯粉混合備用

2. Put the rock sugar, salt, and water boil until melt.
將冰糖,鹽及水混合並開火煮溶

3. Put aside the coconut milk until cold
將椰汁放在旁直至冷卻

4. Pour the cold coconut milk into the mixed flour, and mix it well, until smooth.
將冷卻的椰漿倒入已混合的粉中,並攪伴至沒有粉粒。

5. Split up a small amount for the pumpkin powder to make the Koi patterns, if too stick can add some coconut milk.
分一小份,加入適量南瓜粉混合(用作錦鯉紋),如太乾可以加入椰漿。

6. Put some pumpkin coconut milk into the Koi mold.
將南瓜椰漿放一些在錦鯉模內。

7. Steam for 2 minutes
蒸兩分鐘定型

8. Pour the rest of the coconut milk into the Koi mold, and steam for 15 minutes (medium size need 30-40 minutes) .
倒餘下的椰漿入模,蒸15分鐘。(中魚蒸30 - 40分鐘)

9. Use the pen for food or use the dark cocoa powder and mix with water to point the Koi eyes.
用食用筆劃上眼晴,或用黑炭可可粉加水點上眼睛。

Tips貼士:
-use the water to boil the rock sugar first, and mixed with the coconut milk, will be faster to be cold.
先用水煲溶冰糖,再與椰漿伴均勻,更快冷卻
-Use the oil the put on the mold first it is easy to be take it out (big Koi must put the oil) .
先塗油在模上 更容易脫膜(大錦鯉魚一定要塗油,小的不用也可以)。
- if for medium size Koi, please add all the ingredients 50% more.
如做中錦鯉,請將所有材料加多一半的份量。
