Open the photo album and select the photo you want to set as wallpaper. Press and hold on bottom button. You can select the option for wallpaper.

I sugest you update the firmware to latest version for any bug fixes:
Creative ZEN V Plus Firmware 1.15.03 (30 Apr 2007)
