Both locking your bag closed and locking it to a fixed object are a good idea. I’ve had things pilfered a couple times on board trains in Europe. I pretty much use PacSafe bags and backpacks on the train now and haven’t lost anything with them and I am now pretty compulsive about locking them securely.

行李要放在眼光可見的地方......若上洗手間、去餐車,恐需等火車在動的時候去上......
I've never locked a bag to anything in decades of travelling throughout the world. Trains require tickets and have human security and ticket barriers. The odds of a thief wanting to go buy a ticket and then try and walk off a train with a huge bag, unable to run quickly and then have to get down stairs, up stairs, past security and or ticket barriers with someone chasing after them is a risk they don't want to take for what will most likely just be a big bag full of clothes and toiletries.
Thieves want to have a quick escape and take small high value items, wallets, phones, cash, jewellery without the person even noticing.
You'll be fine. Keep your valuables close and in front of you, insure yourselves and just keep an eye on your bag, I doubt anyone will want to steal your big bag.

Just commenting because I just had my luggage (wheeled bag) stolen off a rack in Northern France last night. So it does happen.
