Ben, SF to LA was my first choice before I decided to go to Taiwan. My problem with SF to LA was that it required outdoor camping along the way, and I am not a camping person.
My rough calculation is that a one-hour car drive on a highway is equivalent to a one-day bike ride. I have been driving between SF and LA (about 6 hours) many times to visit my kids up north. Along this route, there are some one-hour spans with sparse suitable lodgings, and thus require camping. I once encountered two Canadian cyclists on their arrival at LA after cycling down from SF. They confirmed that they did have to camp.
