According to the Apple Care policy, after you pass the default warranty period (usually one year) you will not be able to purchase the Apple Care to protect your product. In another word, you will need to purchase the Apple Care within the warranty period. If you really want to save money, you should find better way to do it in stead of cheating and it doesn't sounds ethical though... Plus you may not allow to buy the Apple Care anyway...
All Apple product's serial number are registered in their database therefore, when you type your serial number in Apple's support website page it will tell you when the product was purchased.
